Acai Bowl with Fruit, Nuts & Seeds

Since strawberries are in-season, and soon raspberries, blackberries and blueberries will also be in abundance and at their peak, I thought it would be fun to share my Acai Bowl recipe. Just remember that these can be high in sugar, but there are some simple tips below to keep your bowl balanced, healthy, delicious and beautiful!





Servings: 2


Ingredients

  • Acai packets frozen Acai puree (unsweetened)

  • 1 cup Greek yogurt

  • 1 cup juice or water (to limit the sugar, use water)

  • 1 frozen banana

  • 1 cup frozen berries

  • Toppings

  • 1 small banana, sliced thin

  • 1 cup fresh fruit (strawberries, raspberries, blackberries and/or blueberries, peaches, pineapple, kiwi, etc.)

  • 1/2 cup granola

  • 1/4 cup nuts & seeds (toasting them will add more flavor and texture)

  • 2 tsp. Chia Seeds

  • 2 tsp. Hemp Seeds


Instructions

  1. Prepare your toppings and place on a cutting board or plate.

  2. Add the first 5 ingredients to a blender, and blend until smooth. You may need to use a "pusher" because it will be thick. You can also add more liquid, if needed.

  3. Divide the frozen puree into 2 shallow bowls.

  4. Top each with a 1/2 of a small banana, 1/2 cup fresh fruit, 1/4 cup granola, 2 Tbsp. nuts and 1 tsp. of Chia Seeds and Hemp Seeds.

  5. Serve immediately.


NOTE: My recipe uses unsweetened Acai puree, Greek yogurt and water to make the base. I also love to add nuts and seeds to provide some healthy fats because, not only are fats healthy, they also help to keep your blood sugars lower.
