This is another one of my favorite Summer salads because the star ingredients are cucumbers, cherry tomatoes and red onions, which are abundant throughout the Summer season. Add some fresh dill & mint, and you've got a beautiful, delicious & healthy Mediterranean salad.
Mediterranean Cucumber & Tomato Salad
Servings: 4
Ingredients
· 2 Tbsp. lemon juice
· 1/4 cup olive oil
· 1/4 tsp. salt
· 1/8 tsp. pepper
· 1 Tbsp. fresh dill, chopped
· 1 Tbsp. mint, chopped
· 1 large cucumber, diced (preferably one with small seeds, like English)
· 1/2 cup cherry tomatoes, halved
· 1/4 cup diced red onion
· 1 cup chickpeas (rinsed)
· 1/4 cup crumbled feta cheese (optional)
Instructions
1. In a large bowl, add the lemon juice, lemon zest, olive oil, salt and pepper. Whisk together.
2. Add the herbs and mix thoroughly.
3. Add the cucumber, tomatoes, red onion, chickpeas and feta cheese, if using.
4. Mix all ingredients well.
5. Taste and add more salt and pepper, if needed.
