Summer Vegetable Medley with Spices
Servings: 3-4
Ingredients
1 Tbsp. olive oil
1 small onion, diced
1 large zucchini squash (or 2 small), diced small (approximately 1/4 inch pieces)
1 ear corn, kernels cut off
1 tsp. chili powder
1/2 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. black pepper
Instructions
1. Cut up the vegetables.
2. Heat a sauté pan on medium high, and when hot, add the olive oil.
3. Add the onion and cook for 3 to 4 minutes until it becomes translucent.
4. Add the zucchini squash and cook for 2 minutes.
5. Add the corn, chili powder, garlic powder salt, black pepper, and cayenne pepper (if using) and cook another 3 to 4 minutes.
6. Taste and add more salt and pepper, if needed.
Summer Vegetable Medley with Pesto
Servings: 4
Ingredients
· 1 Tbsp. olive oil
· 1 medium yellow onion, diced
· 2 ears corn, kernels cut off the cob
· 1 large zucchini squash, cut into small diced pieces
· 16-20 cherry tomatoes
· 1 ½ Tbsp. pesto
· ½ teaspoon Salt
· ¼ tsp. black pepper
Instructions
